Makes 20 each recipe. They will last around 5 days in the fridge. Easy to freeze & grab on the go when a sugar craving hits!
SWEET & SALTY
1 cup pitted dates
1 cup peanut butter (no added salt, Jess recommends Pics)
½ cup sesame seeds
¾ cup desiccated coconut
Couple of pinches of salt
1 tsp cinnamon
INSTRUCTIONS
- Place dates in a bowl and cover with warm to hot water for 20 minutes to soften.
- In a separate large bowl, mix all dry ingredients together with a spoon.
- Mix dates and peanut butter to mixture with hands until well combined.
- Roll into balls and chill in fridge for an hour to set.
OATY CACAO
2 cups oats
2 cups dates
2 Tbsp cacao powder
1 tsp cacao nibs
1 tsp cinnamon
2 Tbsp coconut oil
INSTRUCTIONS
- Place dates in a bowl and cover with warm to hot water for 20 minutes to soften.
- Place dates and all other ingredients in a blender or food processor.
- Roll into balls and chill in fridge for an hour to set.
LEMON AND COCONUT
¾ cup desiccated coconut
2 cups oats
1 juice from a lemon
½ tsp cinnamon
¼ cup honey
2 Tbsp organic pure maple syrup
¼ cup of coconut oil
pinch of salt
INSTRUCTIONS
- Place ¼ cup of coconut on a plate for rolling balls in.
- Place all ingredients in a blender and blend until mixed. Use a spatula during mixing to scrape mixture from the sides of the bowl.
- Roll into balls, roll in coconut on a plate, and chill in fridge for an hour to set.
